In the interest of eating with the seasons, I have some gorgeous Fall fruits – that I came across at the grocery store (and on sale – SCORE!) that I wanted to share with you so that you could incorporate these little beauties into your seasonal dietary rotation.  The autumnal oranges and reds of the fruit hint at the fact that these fruits are ripe for the picking in the leaf-changing months (or in our case – already dropped).  Their nutritional profile is jam packed with vitamins, minerals, antioxidants, Fiber and more. 

I was looking to change up my morning smoothie and with the Fall fruits sitting on my counter, I came up with this smoothie concoction.  Let me tell you, it’s a real winner.  Filling, sweet/tart and pretty too.

Let’s check out the star players in today’s Fall smoothie recipe.

Persimmons

When choosing persimmons, keep in mind that there are two different varieties: hachiya, which are orange-red, shaped like acorns, and soft and jelly-like (feels like a water balloon) when fully ripe (this is the way you want it); and fuyu, which are yellow-orange, shaped like tomatoes, firmer when ripe, and can be sliced like apples.  I still like my fuyu persimmons soft and mushy – super sweet at this point.  Choose organic if you can.

Persimmons contain high levels of antioxidants like vitamins A and C. These nutrients are extremely important to protect eye retinal damage. Also it protects from cataract or age related macular degenerationPersimmon contains highly beneficial nutrients which protect from free radicals – which protects the body from common disease.

Now, just one persimmon contains six grams of fiber (can we say healthy poop’s), which is already about a quarter of your recommended daily value. Fiber digests slowly, so it keeps you fuller longer.   The fiber in persimmons, called pectin, is responsible for another appetite-controlling feature: pectin helps regulate blood-sugar levels to keep them from spiking, which can help prevent blood-sugar-crash-related cravings.  My kind of fruit!!

** Note:  Eating persimmon fruit with an empty stomach can cause diarrhea. Also eating in excess also cause diarrhea due to its high tannin content. So be safe and eat persimmon in limited quantity or blended with other ingredients to buffer the effects.  Also, Diabetes patients should stay away from it as it contains high amount of sugar.

Cranberries

I adore this tart, little berry because it is an all-star food, and with good reason. Cranberries contain a powerful cocktail of protective phytonutrients; plant chemicals that contain protective, disease-preventing compounds (flavonoids and phenolic acids) that act as antioxidants in the body.  I have you liking them too already, right? 

Cranberries are high in vitamin C, and have antioxidant and antibacterial effects in the body.  In clinical studies, cranberries have been shown to help maintain a healthy urinary tract ( contains natural chemicals that act as antibacterial agents and preventing E. Coli which is the bacteria largely responsible for urinary tract infections, from sticking to the walls of the urinary tract.)  AND Cranberries are especially beneficial to the eyes (they significantly improve symptoms of cataracts, macular degeneration, and diabetic retinopathy).  Liking them more and more!  Again, choose organic if you can.  With the Holidays around the corner, they are available right now, so stock up while they are available – I am.  Keep an eye out for sales – That’s how I found mine.

Ingredients
  1. 8 oz. organic cranberries
  2. 1 large organic orange - peeled - See NOTE below for TIP
  3. 1 organic persimmon - ripe - cut off top
  4. 1/2" knob fresh ginger root
  5. 2 bananas
  6. 3 TB. raw honey or liquid stevia to taste (8 drops) - I used NuNaturals brand
  7. 1 tsp. cinnamon
  8. 1 tsp. vanilla extract or 1/4 tsp. vanilla bean powder
  9. 1 cup organic coconut milk - canned
  10. 1 1/2 cups fresh water
  11. (optional) heaping TB. of greens powder of choice
Instructions
  1. Put all ingredients into a high powered blender (I use a Vitamix) and blend until creamy and smooth. Top with favorite toppings if you so desire.
Notes
  1. If using an organic orange, zest the peel before peeling and discarding. You now have fresh orange zest to use in any recipe. If you don't have anything to use it in right away, FREEZE it on a small plate, then wrap frozen zest ball in foil and keep in freezer storage container. I love to use orange zest in smoothies, tonics, desserts, and savory meals. Don't waste. Use as much of your food as possible.

Decadent Gluten-free Chocolate Brownies

Rich HEALTHY Chocolate Brownies

I was going to wait and share this recipe with you on Friday, but then I thought “Hell,no!  I am doing it TODAY!”  You lovely souls NEED this decadent, gluten-free, healthy, AMAZING chocolate brownie recipe NOW.  Recipe adapted here from the Detoxinista

I am offering a healthy cooking class this coming Saturday, May 18th and it is focusing on ALMONDS and the many ways to use them in a plant-based diet.  From making your own almond milk, raw almond butter, Chocolate Basil Smoothie, Butternut Squash bisque, Thai Almond Dipping Sauce, coconut macaroons and a special add-on recipe for all attendees of class.  This class focuses on using every aspect of the almond – the nut and the left-over almond pulp – in the recipes.  It’s going to be great!  The class is already almost full.  :)

This fantastic brownie recipe caters to the very aspect of using “left-over” almond pulp.  The brownie came out light, moist and fluffy in texture but deep and intense with the chocolate flavor.  As you know, I love adapting recipes to make them BETTER and HEALTHIER (which the original is), but also to throw in some easy tricks and tips. Oh, are you excited or what right now?!

Tip #1 – When a recipe calls for applesauce – which contributes to a more moist final product and lends a natural sweetness factor – use an organic apple (skin is full of fiber and pectin),  cut into slices (don’t use core), put into a high powered blender (I use a Vitamix) and puree for a few seconds – Voila – homemade applesauce that is raw, full of vitamins, minerals, antioxidants and MORE that a store-bought, processed, “hidden ingredients” apple sauce will NOT have.  If you don’t have an organic apple, peel the skin off and you are still doing WAY BETTER than store-bought jars. 

Tip #2 – Coconut sugar is a much healthier alternative to Sucanat sugar, but I still like to use LESS in my recipes.  So, I like to do half sugar and half stevia if a recipe does require some sort of granular sugar for the recipe to come out right, but I still want the sweetness without all the SUGAR.  I highly recommend using NuNaturals stevia – it does not have the bitter after-taste that most processed stevia products have.   I use that Shit in everything! – From sweet to savory recipes.    Stevia is great for people trying to lose weight, have blood sugar issues or candida. I LOVE IT! 

Tip #3 – After making your almond nut milk, simply use the remaining pulp to create a healthy treat.  Please don’t throw it in the trash!   Left over almond pulp is a great substitute for flour in many recipes.  Two versions for drying:

  1.  Dehydrator –  spread your almond pulp out on a tray lined with a Teflex sheet (if not, the pulp will fall through the cracks) and dehydrate at 115 degrees for 4 to 8 hours (longer depending on type of dehydrator used and moisture in environment).  I use an Excalibur 9 tray with timer and LOVE it!  Once the almond pulp is completely dry, Transfer dry pulp to a high-speed blender or food processor and buzz till a flour like consistency is achieved.  It doesn’t have to be perfect!  That’s it!  I store the almond flour in a glass mason jar in my fridge, and use it as I bake. One cup of almonds used in almond milk will yield about 1/2 cup of almond flour.
  2. Oven – spread your almond pulp out on a parchment lined cookie sheet and place in oven set at lowest temperature setting – 200 degrees and “dry out” for 2 – 3 hours.  Keep an eye on it to make sure it doesn’t toast too much.  Transfer dry pulp to a blender or food processor and buzz till a flour like consistency is achieved.  It doesn’t have to be perfect!

This fantastic brownie recipe caters to the very aspect of using "left-over" almond pulp. The brownie came out light, moist and fluffy in texture but deep and intense with the chocolate flavor. Serves an 8″x8″ pan.

Ingredients
  1. 1/4 cup coconut oil, melted
  2. 1 small organic apple* (see tips below) or 1/4 cup unsweetened applesauce
  3. 1/2 cup organic coconut sugar
  4. 7 drops of NuNaturals Liquid Stevia
  5. 1/4 tsp. vanilla bean powder or 1 teaspoon vanilla extract
  6. 2 large organic free-range eggs
  7. 1/4 teaspoon baking soda
  8. 1/2 cup raw cacao powder
  9. 1/4 teaspoon sea salt
  10. 1/2 cup ground almond pulp*
Instructions
  1. Preheat your oven to 350F, and line an 8″x8″ glass dish with parchment paper.
  2. Make your applesauce.
  3. Combine all of the ingredients in a large mixing bowl, and stir well to combine into a thick batter.
  4. Pour the batter into the parchment-lined dish, and bake at 350F for 20-25 minutes, until the edges are pulling away from the sides of the pan and the center is firm.
  5. Allow to cool completely before slicing and serving.
  6. The brownies are so rich and fudgy, you may find that they are difficult to slice without some of the fudgy middles sticking to the knife - I did.
  7. I recommend chilling the brownies in the fridge or freezer to make the cutting process go more smoothly, then allow to thaw to room temperature, if you like.
Notes
  1. For these bars, I use Organic Superfoods for Nutrient Density and Energy along with tonic Herbs for Adaptability & Muscle Repair. 

INGREDIENTS:

Dates, Almonds*, coconut flakes*, Walnuts, Raw Cacao Powder*, Dandy Blend™, Sunwarrior™Blend Protein Powder*, lime juice*, coconut oil*, Maca powder*, cinnamon and sea salt. (* denotes ORGANIC).

Each bar is approximately 2.8 oz and 2″ X 3″ X 5/8″ in size. Because they are handmade, some variation in size and weight can occur.

Dates have a natural balance of many minerals such as calcium, magnesium, manganese, zinc, copper, iron, selenium and potassium. They are high in fiber and a great source of energy.   Dates are rich in Polyphenols, a plant antioxidant that has a high capacity for reducing oxidative stress.

Almonds are a unique package of nutrients – a great source of highly absorbable protein (6 grams per ounce) along with dietary fiber, phosphorus, calcium, potassium, magnesium, manganese, copper, zinc, iron and vitamin E.

Rebounding 101 + Video of My Routine

Get Your Rebounding ON

 I LOVE rebounding! 

Many of you may be asking “What is rebounding and what is she talking about?”  I am here to inform you and hopefully get you interested in this fantastic form of movement and exercise.  Rebounding is the therapeutic movement on a mini-trampoline. Because it moves all parts of the body all at once, it can also be called cellular exercise.

Rebounding is a lymphatic exercise.  The lymphatic system is the metabolic garbage can of the body. It rids you of toxins such as dead and cancerous cells, nitrogenous wastes, fat, infectious viruses, heavy metals, and other assorted junk cast off by the cells. The movement performed in rebounding provides the stimulus for a free-flowing system that drains away these potential poisons.   Rebounding’s bouncing motion effectively moves and recycles the lymph and the entire blood supply through the body many times during the course of the rebounding session.   Rebounding has the same effect on your body as jumping rope, but without any jarring effect to the ankles, knees, and lower back that comes from hitting the ground. As an exercise it is superior to any other because it not only uses gravity but also two other forces, acceleration and deceleration. At the top of the bounce you experience weightlessness, and at the bottom your weight doubles pulling you into the center of the rebounder.

Urban Rebounder

 

Rebounding is an exercise that reduces your body fat – which is highly beneficial for diabetes and a host of other diseases, provides an aerobic effect for your heart, and gives your body energy when it’s tired.   I jump on my rebounder when I NEED energy, not just when I HAVE energy!    You can easily jump on your mini-trampoline in your living room, your office, or in your backyard.  Rebounding is the most convenient form of exercise around.

Everyone should start with the gentle “health bounce” which means your feet remain IN CONTACT with the mat while the body moves up and down. The health bounce is sufficient to obtain all the benefits of rebounding while gently strengthening the entire body. The health bounce can be done while talking on the phone, listening to podcasts on your ipod or watching TV.  Adults can start with 5 minutes of rebounding and increase their time as their fitness level improves.

When I have been working at the computer for awhile and know that I need to get my circulation going, or feeling sluggish or stagnant – REBOUNDING to the rescue.  I usually start slowly with some gentle bouncing and then work up from there.  Some days are gentle according to what my body wants and some days are more active and vigorous.    I love to turn on some good tunes and have FUN!

You need a quality rebounder

I bought my Urban Rebounder at Buy.com (now known as Rakuten.com) 3 years ago and you can also get them at Amazon.com.  Another quality one is Reboundair.  Just don’t go to your local Walmart and buy one – they are cheap, will not last that long and some people claimed to have gotten injured on the “low quality” rebounders.

I wear my Vibram five finger toe shoes when rebounding during the cold months because my feet are cold!  We keep our house on the cool/warm side to save gas.   I prefer to rebound barefoot – which happens when the temps are warmer.   Find what works best for you.

 

Other benefits of rebounding

  • Increases oxygen delivery and blood flow.
  • Promotes Mind-Body Unity – better learning, intuition, balance of two hemispheres of the brain.
  • Creates homeostasis which is the general balance of all systems of the body. Sickness represents blockages in the body. Rebound Exercise can help to remove the blockages, return blood flow and circulation back into the diseased parts.
  • It also increases the white blood count, thus strengthens the immune system. One most important aspect is the return of the trapped blood proteins. (source)

Health Bounce

 This move bounces you gently without leaving the mat. Just the up and down movement starts the flow of the lymphatic. 2 minutes will increase the lymph flow up to 14 times.

  • warm-up
  • relieves tension, relaxes
  • rehabilitates after bed rest
  • stabilizes vestibular (inner ear)
  • stimulates the nerves in the joints, ligaments, and muscles.
  • creates balance between mind and body, slows the brain waves to alpha level which is the level where we connect with the inner world, learn better and can relax
  • improves vision

Strength Bounce

The body weighs 1 G at resting point. The higher you jump, you increase the G force where at 4 G you access the maximum oxygen absorption.

For this bounce you want to spread you legs shoulder-wide and move up and down leaving the mat. For more fun you can kick your legs up and forward. By leaving the mat, even your feet get the benefit of massage when you touch the mat again. That stimulates all the reflex point on the bottom of the feet. You can try to land on your toes and roll the foot down toward the heels. That is added stimulation to the internal organ. (source)

Aerobic Bounces

For this bounce you want to get your heart rate up. By moving vigorously on the rebounder, this can be accomplished and should be kept up for 20 minutes to get the most benefits. By adding the deep diaphragmatic breathing it can be accomplished with any move.   To avoid getting bored, do a variety of bounces. Lifting the arms above the heart will increase the heart rate and the oxygen flow.  (source)

In honor of today’s post, which I announce the 3 winners of Linda Wagner’s GREEN SMOOTHIE DETOX ebook, I am sharing with you one of my favorite green smoothies that is great for weight loss, detoxifies, alkalizes , floods the body  with nutrients GALORE on a cellular level and tastes FANTASTIC!  Plus the color is just STUNNING! 

Superfood GREEN Smoothie

  • 3 cups fresh water
  • 1 large mango (peeled) fresh or frozen
  • 2 – 3 bananas (peeled) fresh or frozen
  • 3 HUGE handfuls Organic Spinach (or your greens of choice)
  • small handful organic cilantro
  • small knob of ginger root
  • 1 TB. chia seeds
  • 1 tsp. spirulina
  • chunk of fresh aloe vera gel
  • sweetener of choice (I use NuNatural liquid stevia) to taste

Blend in a high powered blender (I use a Vitamix) till smooth and creamy.  Adjust ingredients to your preferred thickness and consistency.  Top with favorite toppings:  some of mine are hemp seeds, goji berries, mulberries, fresh local bee pollen, raw cacao nibs, coconut flakes, etc.  Pour into glass of choice, mason jar for traveling (I do this all the time!) or small bowls for dogs.  My dog’s LOVE their smoothies and come running to my feet when the Vitamix turns ON.  They know what’s coming to them.  I feel good knowing that they are getting great nutrition this way too.

Today, I am so happy to share with you all my beautiful friend, Linda Wagner from Linda Wagner.net.

I came across Linda’s website and blog over a year ago.  Her recipes, articles and her presence were absolutely refreshing and inspiring to me.   We started up a friendship thru comments on her blog and personal emails.  She is one of the reasons that I started my blog in the first place.  She made a comment that if I started a blog, she would read it.  I thought – “REALLY!”  So, I thought about it for a month and ventured out into the blogging world and it has been one of the BEST decisions of my life.  So, Linda!  Thank you for those words of inspiration and motivation.  I am doing something that I am passionate about!

Linda, also, does something that she is passionate about.  She has helped hundreds of people across the country achieve radiant, long lasting physical and emotional wellness.  Linda is an experienced and skilled Nutrition Coach who utilizes a holistic methodology to invigorate the mind, body, and spirit.  It is her passion to assist others in achieving their true, unlimited potential.  Linda has the unique ability of identifying root, underlying issues for both basic and complex nutritional concerns.  She is easy to talk with and very down to earth.   She assisted me with some health issues (such as Candida) back last Spring.  I was able to address the issue through nutrition, supplements and stress reduction and got those little buggers under control in my body.

Linda now lives a happy and healthy existence, however it wasn’t always that way.  Even as a competitive athlete following a mainstream ‘healthy diet’, she experienced what so many suffer from on a daily basis; weight fluctuation, fatigue, depression, anxiety, acne, frequent colds and flu, yo-yo dieting, disordered eating, loss of purpose, brain fog, insomnia, chronic pain, and a strong disconnection from myself.  Boy, does that sound familiar!?  She was following all of the so-called healthy eating guidelines and doing everything she was supposed to do.

Linda knew there was more to life and health and so begun her quest in a healthier lifestyle. Linda has trained extensively with some of the nation’s foremost PhD’s, Clinical Nutritionists, Biochemists, Athletic Coaches, and Sports Psychologists.  

She has the same holistic methodology that I believe in and live also.  She does not believe in restriction, suffering, deprivation, counting calories, diet foods, excessive exercise, or trying to heal the body from the outside.  She believes in eating wholesome, delicious foods with abandon, having fun, feeling inspired, eating out, having a sense of purpose and passion, feeling EMPOWERED, confident and beautiful in your own skin!!

Linda says that each year just gets better and better.  Long gone are the days of counting calories, restricting & deprivation, yo-yo dieting, torturous work outs, frequent colds, emotional breakdowns, etc.  She LIVES life now and doesn’t obsess over it.   Linda wants to share her knowledge with you so that you too can enjoy the freedom that comes from true health.  She wants you to know what it feels like to glow, radiate, THRIVE, and SHINE from the inside out!

Spaghetti Squash with Marinara & Italian Nut Meat

This is one of my favorite meals!  I just had to share it with you, finally. It is snowing outside and COLD!  This is a perfect COMFORT FOOD dish that doesn’t leave you feeling heavy, bloated or sluggish after eating it.  My kind of meal!  This recipe is gluten free, healthy, nourishing and tastes AMAZING!  For those of you working towards a weight loss goal, replacing spaghetti squash instead of rice or pasta is a great idea.  – You will definitely notice how you look and feel.

Spaghetti squash contains many nutrients and is a great source of vitamin B6, vitamin C, Vitamin A, beta carotene, potassium and dietary fiber – plus, it’s low in saturated fat and cholesterol and has a high water content.

Roasted Spaghetti Squash:

Take one spaghetti squash –  Preheat oven to 400 degrees F. Cut squash in half lengthwise. Using a spoon, scoop out the seeds. Place on a baking sheet, cut side down and bake for 30-40 minutes.

 While the squash is cooking, prepare your marinara sauce (if making from scratch) and the Italian walnut meat.

Homemade Marinara:

  • 3 Large organic tomatoes
  • 1/2 cup chopped fresh basil
  • 1/2 cup sundried tomatoes (soaked if dried and not in olive oil)
  • 2 – 3 garlic cloves
  •  1 tsp. sea salt
  • 1/8 tsp. cayenne (optional)
  • 3 dates (pitted and soaked)
  • 1/8 cup extra virgin olive oil

Place all ingredients in a food processor or high powered blender (Vitamix) and blend till smooth.  Taste and adjust seasonings. 

Italian Nut Meat:

(Makes about 1 cup)

  • 1 cup raw walnuts
  • 2 TB. Italian seasoning
  • 1/4 tsp. sea salt
  • Bragg’s Liquid Amino’s – squirt
  • cayenne – to taste (optional)

Place walnuts in a food processor and process into small pieces.  Add the remaining ingredients; pulse to mix well.  That’s it!  Easy-peasy!  This mix will keep well in the refrigerator for about a week.

When the squash is ready, remove from the oven and with a towel, hold the squash and scrape the interior flesh with a fork or spoon into a bowl or on plate.

Top with marinara, fresh cut basil and Italian nut meat.  You can add chevre goat cheese if you so desire.   Enjoy!

This asparagus soup is so creamy and dreamy.  Asparagus is one of my favorite green veggies all year round for it leads nearly all produce items in the wide array of nutrients.  This recipe, within Ayurveda, is tri-doshic friendly (mind-body constitution) for Vata, Pitta and Kapha.  This makes it easier to cater to most people.  This is a great soup for weight loss.  This soup is great for a lunch or dinner meal with a side salad, half baked sweet potato or gluten-free bread.

Did you know that Asparagus is the leading supplier among vegetables of folic acid. A 5.3 ounce serving provides 60% of the recommended daily allowance for folacin which is necessary for blood cell formation, growth, and prevention of liver disease.   It is also very low in sodium, a good source of potassium, fiber, thiamine, Vitamin B6, one of the richest sources of rutin, a compound which strengthens capillary walls and contains glutathione (GSH) - which is one of the most potent anti-carcinogens and antioxidants found within the body. GSH is used to detoxify carcinogenic electrophiles and protect cells from oxidative damage, thereby preventing damage to DNA and other macromolecules. Thus, GSH acts as an initial and primary defense against chemicals that can cause cell transformation and/or cell death. Asparagus had the highest GSH content of the several foods tested.(source)

OK!  Before we get to the recipe, I want to talk to you about something.  You know that I am going to breach any topic with you.  If you eat asparagus frequently,  you probably know this already.   However, if you are new to it, here is some information that might be helpful to you.  Within 20 minutes of eating asparagus and you go the bathroom to pee – it is known to cause a rather strange smell in the urine of those who consume it.   WHAT!!?? You say.  It’s true!   Your body breaks down asparagus during digestion into sulfur-containing chemicals that give your urine a distinctive odor.

Asparagus is no stranger to debate, and the disagreement over which specific ingredient causes urine to smell is not the only example. Because many people claim that, regardless of asparagus consumption, their urine does not smell, there are multiple theories regarding that as well. The first claims that everyone’s urine is in fact affected by asparagus, but only about half of the population have the specific gene that is required to smell the change. On the other hand, the second theory states that only half of the world’s population has the gene that’s required to break down the compounds found in asparagus and, if the body doesn’t break them down, no smell is emitted. Whichever reason is correct, for many people, asparagus will forever be known as the vegetable that makes your urine smell strange.  (source)     So the issue isn’t whether or not your pee is smelly; it’s whether you’re able to smell it. If you smell a funny fragrance in your urine after you eat asparagus, you’re not only normal, you have a good nose.  ;)     NOW, ON TO THE RECIPE!

Look for firm, fresh, spears with closed, compact tips and uniform diameter, so that all spears will cook in the same amount of time. Larger diameter spears are more tender.  Asparagus is best stored upright with ends soaking in water in your refrigerator or on the kitchen counter or wrap a moist paper towel around the stem ends and keep in fridge.   I just used a glass measuring cup for storage, but if you use a pretty glass or vase, you’ve got a beautiful arrangement that brings color and texture into your kitchen decor.  You don’t always have to have flowers to brighten a room – veggies and fruits do it for me too!

Wash your asparagus bunch well in fresh warm water and spread out on a kitchen towel to dry a bit.

Snap off the hard, woody ends (save for composting or give to pets – my dogs LOVE them as treats!)  Take the long spears and break into 2 or 3 pieces – RESERVE the tips separately!  We’re going to cook the tips separately last to put on top of the finished soup.

Cream of Asparagus soup

(serves 4 small bowls or 2 large bowls)

  • 1 tsp. ghee or coconut oil
  • 1 large bunch of fresh asparagus (break into small/medium sized pieces and RESERVE TIPS for garnish!)
  • 1/4 of a small onion – chopped
  • 1 cup vegetable stock (I make mine by adding 1 TB. Herbamare to 1 cup water – EASY!)
  • 1/2 cup water ( use less for a thicker soup, can always add more at the end if need be).
  • 2  – 3 TB. chevre goat cheese (Kaphas can have in moderation) –  (we’re going for creaminess factor here)
  • Sea salt to taste
  • Fresh ground black pepper to taste
  • Hemp seeds (optional) for garnish

Directions:

  1. Heat the ghee/coconut oil in a large saucepan over medium-high heat.  Add the asparagus and onions and saute for 5 minutes.
  2. Pour in the stock and water.  Bring the mixture to a boil, then reduce the heat and simmer for 10 to 12 minutes.
  3. Transfer the soup  to a blender, add the goat cheese and blend until smooth. Leave soup in here while you go to next step real quick.
  4. Toss those asparagus tips back into saucepan with a tiny knob of ghee or coconut oil and saute on medium-high heat for 3 – 5 minutes.  When done, transfer to a small bowl.
  5. Return the soup to the saucepan, gently rewarm (or rewarm/cook in your high speed blender such as a Vitamix) and season to taste with salt and pepper.
  6. Ladle or pour the soup into individual serving bowls, garnish with the asparagus tips and hemp seeds and serve immediately.  
  7. Enjoy this lovely soup with good company in a soothing environment.  :)

In Ayurveda cooking, Kitchari (or kichadi) combines protein (mung dhal) and carbohydrate (basmati rice) into a single dish – it’s best known in Ayurveda as a cleansing and complete protein meal.   This amazingly tasty dish heals digestive distress, balances the metabolism, is a potent blood cleanser, liver cleanser, assists in healthy weight loss, allowing the body’s tissues to detox what they don’t need and absorb the nutrients they do and is a breeze to make!   Your body will feel so good that extra weight will fall off, you’ll sleep better, your digestion & elimination will improve and your skin will shine.

 In Ayurveda, digestion is of  #1 importance! Based on ayurvedic understanding of agni (digestive fire), white basmati is most preferred form of rice as it is lightest and easiest to digest. Specifically in terms of a kitchari cleanse, we are looking to eat light digestible food that is nourishing while also allowing our bodies to digest the accumulated ama (toxicity due to excess or improper foods that the body has not digested fully, leading to a variety of maladies from indigestion and gas to excess cholesterol and more). When your agni is stronger, you are more capable of digesting heavier foods. A kitchari cleanse will help to strengthen the agni.   Regular brown rice is actually pretty tough to digest – it takes a long time to get through the system.  If you feel heavy, bloated, are not hungry, or are not pooping, switch to white rice, like basmati. You’ll probably feel a lot better.

Use Mung Dhal (aka mung dal or mung dahl or moong dal…it can be confusing!)  They are yellow and split.  They have been used for centuries to detox the body. Don’t use whole green mung beans – they are not as digestive friendly and can cause extra gas or bloaties (what we DON”T want!)  Check out this article for better clarification on the RIGHT dahl to purchase – helped me immensely!

There are LOTS of variations on Kitchari, but here’s one that I especially love in the Fall and Winter months . This recipe is tridoshic friendly – healing for all doshas (balances Vata, Pitta, & Kapha).  If you don’t know your dosha (Ayurvedic body-mind type) – take the test to find out.   Stay with 2 or 3 veggies in this dish so it is more easily digestible.   Enjoy!

Kitchari

  • 1 cup white organic basmati rice OR organic quinoa (I’ve tried this and it’s great too!) – soak overnight and rinse well
  • 1/2  to 1 cup mung beans (see variations below), soaked overnight and rinse well (NOT the whole green ones)
  • 2 TB.  ghee (clarified butter)
  • 1 TB.  fennel seeds
  • 1 TB. cumin seeds or powder
  • 1 TB. ground turmeric
  • 2 TB. chopped fresh ginger
  • 5-6 cups water (more if needed – if adding extra veggies)
  • 3 leaves of Swiss chard (can also use spinach or kale)
  • 1 cup each (or more – I LOVE my veggies):  carrots, sweet potato, celery (optional veggies: asparagus, green beans, beets)
  • 2 tsp.  sea salt (more to taste)
  • cilantro for garnish – We like LOTS!  (Can also use parsley, dill or basil)
  • lime juice

Rinse rice and beans well (several times) and set aside. In a large pot, heat ghee over medium heat. Once ghee has melted, add fennel, cumin and turmeric. Stir well, (keep in mind the turmeric will stain EVERYTHING – so use stainless steel measuring spoons over plastic),  then add rice and beans and combine well.

When rice & beans begin sticking to the sides of the pot, add ginger and water.  Cover and bring to boil.  Stir and set timer for 20 minutes to allow rice & beans to cook at medium heat.

While the rice and beans are cooking, let’s chop the swiss chard, cut the carrots, sweet potato and celery and chop any cilantro you’ll be using to garnish and further assist digestion (and it tastes amazing!).

Once rice and beans are cooked, add vegetables and mix well. Add more water if necessary (depending on how many veggies you added),   then cover and allow vegetables to cook to finish the dish (about another 20 minutes or so).  The finished consistency should be rich, thick and soupy. (I show you what to look for in the recipe video).

Before serving, add the lime juice and fresh chopped cilantro (also known in herbal medicine to clear heavy metals out of the body). Season with more salt to taste.   This is a very filling and satisfying stew.  Start with a small bowl and see how it fills you up – then if you want some more, add a few more servings.  Be mindful and aware of how much you eat (at every meal) and ENJOY in a peaceful environment (no computer time, tv or loud distractions) with good, satisfying company and peaceful background music for BEST digestion and nutrient assimilation.

This pot will make enough for 6-8 servings (depending on size of bowl).  For any leftovers, it is best to reheat in a little pan on the stove (you will want to add a little water to thin out)  – for lunch and/or dinner over the next few days.  Use within 3 days. Just remember that the longer something stays in the refrigerator (or freezer), the more lifeless it will become.  FRESH is the BEST. 

Dosha appropriate variations:

  • Kaphas do well with more beans and spices and less ghee and rice.
  • Pittas do well with equal parts beans and rice, lots of cilantro, and some ghee & appropriate spices.
  • Vatas do well with more rice, ghee and spices and less beans.
