Vegan Broccoli Avocado Veggie BUDDHA Bowl with Tangy Dressing

This is one of my favorite “go to” recipes that is easy, nutritious and filling.  You could add any veggies you like in it and you’ve got a great meal!  I used mushrooms because I had some that needed to be used, but I don’t always add to the recipe.  It is very versatile.  Asparagus is quite lovely in this!

Ingredients

    • 2 bunches of broccoli, chopped
    • 1 avocado
    • 1 lemon
    • 1 TB. extra virgin olive oil
    • 1/2 tsp of sea salt
    • fresh ground pepper
    • 2 large clove garlic, chopped
    • 1/2 yellow or white onion, chopped
    • mushrooms –  8 oz. package – pre-sliced
    • 1 TB. coconut oil

Directions:

Start out by chopping up your garlic, onions and mushrooms (if whole) and adding them to a pan with the coconut oil.  Let cook for a several minutes, until the veggies are soft and  translucent.  At the same time, steam broccoli for about 10 minutes or so.

While broccoli is steaming and onions/garlic/mushrooms are sauteeing,  add the juice of 1 lemon, olive oil, black pepper and sea salt to a large bowl.  Chop up the avocado into small chunks and add to the bowl.

When broccoli is done, add the warm broccoli to the bowl along with the onion/garlic/mushroom mixture and gently mix all ingredients.  Taste and season accordingly.  Add more lemon juice if needed to make more tangy (I like it this way).
